Great opportunity for the right candidate who is passionate about BBQ and wants to join a fun and fast paced environment. Directly responsible for all meat smoking functions including stocking, rotation and pars as well as trimming, seasoning and smoking high quality beef, pork and poultry. Responsible for operation and maintenance of the smokers, grills and fire boxes. Performs other food preparation duties, including rubs, sides and sauces as needed. Must maintain a strict adherence to quality standards, sanitation and cleanliness of the pit area. Hours available immediately!
RESPONSIBILITIES:
* Trims and seasons all meats.
* Masters smokehouse skills to properly cook all food items within established time standards.
* Follows all standardized recipes.
* Follows all company and Health Department food safety standards and practices.
* Maintains a safe, secure, and healthy work environment by cleaning work stations, equipment, and utensils.
* Ability to analyze, calculate, and write productions levels and pars.
* Checks smokers for proper settings, functionality, and temperatures.
* Keeps equipment operating in top shape by following operating instructions, troubleshooting breakdowns, maintaining supplies, performing preventive maintenance, and informing management of needed repairs.
* Master's and executes all opening, mid-day, and closing duties.
* Communicates with other team members to ensure the service line is stocked at all times.
* Exceeds quality standards and provides superior food products and services.
* Removing garbage and recycling.
* Perform other duties as assigned.
* Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards.
* Fill in where needed to ensure guest service standards and efficient operations.
* Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs.
* Ensure that all products are ordered according to predetermined product specifications and received in correct unit count and condition and deliveries are performed in accordance with the restaurant’s receiving policies and procedures.
* Check and maintain proper food holding and refrigeration temperature control points.
REQUIREMENTS:
* A minimum of 2 years of working experience as a cook.
* Experience in BBQ wood-fired cooking methods preferred.
* Punctual and reliable.
* Strong attention to detail.
* Ability to listen and communicate effectively.
* Be able to reach, bend, stoop and frequently lift up to 100 pounds.
* Be able to work in a standing position for long periods of time (up to 10 hours).
* Ability to keep work areas clean and organized.
* Practice established food handling procedures and meet any local health regulations.
* Possess a positive attitude and ethics which support our values and culture.
* Ability to operate under pressure in a fast-paced, high-volume, clean, customer-focused restaurant.
* Strong time-management skills; ability to multi-task, prioritize, and organize.
