Contribute to a safe work environment, through compliance with established safety guidelines, identifying potential safety hazards, and reporting same to the appropriate person for proper resolution.

- Responsible for preparing all baked goods and pastries for food & beverage operations, according to department specs and recipes.
- Ensures all final baked goods and pastries preparation is in compliance with company standards.
- Prepare orders according to standard recipes in proper, professional, and timely manner. Proficiency in piping bag and decorating techniques.
- Follow all preparation steps according to the quality-standardized recipes set by management.
- Inspect all culinary equipment before and after use.
- Understand and adhere to the proper storage of all food products, especially that of either hot or cold meats, seafood or other high protein items.
- Understand Banquet Event Orders and complete production of items specified according to set standards. Complete inventory of dessert items of other outlets and produce accordingly
- Maintain the proper inventory of the work stations while controlling un-necessary waste.
- Review and maintain the prep list and the daily pars.
- Inform management of any problems or issues encountered during their assigned shift.
- Follows all recipes and control procedures.
- Responsible for maintaining a clean and sanitary area at all times in full accordance with State Health Regulations.
- Assists in all areas of food production as needed.
- Responsible for maintaining a consistent, regular attendance record.

AGE and GAMING:
18 years of age or above
Gaming property – Must be able to obtain and maintain a gaming license issued by the Choctaw Gaming Commission.
EDUCATION and/or EXPERIENCE:
High School diploma or GED is preferred. Four (4) years progressive experience in professional culinary operations is required. One (1) year experience in a bake shop or pastry kitchen is required.
SPECIAL QUALIFICATIONS:
Strong organizational and interpersonal skills required. Must be Serv-Safe certified or become certified within (180) days of employment at Pearl River Resort. Emphasis on classic and modern cooking/pastry skills. Strong chocolate and sugar skills. Strong cake decorating and piping techniques to include Wedding Cake assembly and decoration.
LANGUAGE SKILLS:
Ability to read and interpret documents such as safety rules, operating and maintenance instruction, and procedure manuals. Ability to write routine reports and correspondence.
MATHEMATICAL SKILLS:
Ability to add and subtract two digit numbers and to multiply and divide with 10’s and 100’s.
REASONING ABILITY:
Ability to define problems, collect data, establish facts, and draw valid conclusions. Ability to interpret an extensive variety of technical instructions in mathematical or diagram form and deal with several abstract and concrete variables.
PHYSICAL DEMANDS:
The physical demands described here are representative of those that must be met by the Associate to successfully perform the essential functions of this job.
Essential responsibilities include moderate to heavy physical ability such as lift or maneuver at least fifty (50) pounds, push and/or pulling up to one hundred (100) pounds food cart and standing/walking 90% of the shift. Perform position responsibilities and/or essential functions on slippery or wet surfaces. Work with hazardous chemicals. Must be able to work while wearing latex, vinyl, or rubber gloves. Bending, stooping and stretching of arms during assigned shift.

The work environment characteristics described here are representative of those an Associate encounters while performing the essential functions of this job.
The noise level in the work environment is usually moderate. When on the casino floor, the noise level increases to loud. When on the casino floor or other designated areas may be subjected to tobacco smoke.
Due to the unpredictable nature of the hospitality/entertainment industry, Associates must be able to work varying-schedules to reflect the business needs of the property.
