The Role

Special Team CaptainMeat and Seafood - As Dom’s Kitchen & Market Meat and Seafood Special Team Captain, spread your passion and knowledge recommending a particular cut, suggesting a recipe or sharing cooking tips with our diverse offerings that will satisfy any personal craving as we serve the best USDA prime steaks, succulent FRESH seafood and shellfish along with inventive and innovative inspired main dishes and appetizers. You will lead a team of artistic Meat and Seafood specialists whose actions will provide each guest with a peak dining experience. As the Meat and SeafoodTeam Captain, you will lead Dom’s Kitchen & Market dynamic team dedicated to delivering Talk of the Town Guest Service!

Responsibilities

Dom’s Kitchen & Market Special Team CaptainMeat and Seafoodwill oversee the Meat/Seafood Department and be accountable for total Meat/Seafood responsibility that merges your love for people – both team members and guests – with operational excellence. You will be:

  • Measured and rewarded by your ability to deliver Talk of the Town Guest Service, drive optimal Meat/Seafood teams’ performance, maintain Meat/Seafood operations and achieve financial targets
  • Accountable for the extraordinary experience of your team and your guests
  • Responsible for engaging conversations with guests and ensure each guest receives an extraordinary Talk of the Town guest experience
  • Focused on driving sales through technical expertise, industry knowledge and innovative merchandising
  • Expected to successfully train develop, retain, mentor and motivate Dom’s Kitchen & Market first-class Meat/Seafood team leading to inspired teamwork creating an inviting atmosphere for guests
  • Assist with work duties across Meat/Seafood including cross-training of team members
  • Challenge Meat/Seafood team daily to provide world class FRESH conditions/presentations including Quality, In-Stock, In-Code, rotation, temperature checks, correct labeling, scale accuracy, COOL compliance
  • Accountable for scheduling for the Meat/Seafood team for maximum productivity and high standards of quality that align to business needs and budgeted labor goals
  • Lead appropriate Meat/Seafood sales forecasting, planning, ordering, sales floor inventory levels
  • Ensure food production is executed, recipes are followed, food prep is technically accurate within budgeted ingredient cost goals, institute controls to minimize food and supply waste, implement appropriate repurposing of food waste
  • Responsible for receiving of product, invoice accuracy, vendor commitments, vendor backstock
  • Accountable for backroom, cooler and freezer logistics including minimal inventory levels, freshness dates and organization of product and supplies
  • Maintain the high standards of Food Safety and Sanitation at all times throughout Meat/Seafood sales floor, cooler and backroom including regular cleaning and maintenance of equipment, cases and shelves with organization and sanitation of all backrooms, food prep areas and supplies
  • Listening for the Voice of the Guest to identify Meat/Seafood department trends for guest needs and expectations and counsel with Coaching Assistant to integrate findings to deliver value and accelerate growth

Qualifications

  • 5+ years’ leader experience in Meat/Seafood retail, restaurant or hospitality
  • 4 year college degree, culinary degree or equivalent experience preferred
  • Food Safety Certification preferred
  • Excellent communication, organizational and planning skills
  • Strong cognitive skills, including problem analysis, decision making and financial analysis
  • Advanced computer skills
  • Sense of urgency, time management, prioritization and multitasking skills
  • Detail oriented
  • Ability to maintain composure, meet deadlines and work effectively under pressure in a fast-paced environment
  • Available to work a flexible schedule including evenings, weekends and holidays
  • Availability must reflect the needs of the business, which may change from time to time
  • Strong sense of team – desire to WIN together with a first-class team!

Physical Demands and Work Environment

  • Must be able to perform the following physical activities regularly: Walking, standing, kneeling, reaching, climbing, balancing, stooping, pushing, pulling, lifting, grasping, feeling, talking, hearing and repetitive motions
  • Walking/Standing 90% and sitting 10% of day
  • Frequent movement within the store to access various departments, areas and/or products
  • Physically able to exert up to 50 pounds of force often and exert up to 10 pounds of force constantly to move objects
  • Occasional exposure to extreme temperatures – walk-in coolers and freezers
  • Exposure to chemicals and cleaning products
  • Operating equipment (baler, compactor, power jack, cutting tools, knives)
