Position Summary:
Responsible for supervising and overseeing the kitchen operations for restaurant, banquets and room service. This position reports directly to Director of F&B
Essential Functions:
- Ensure that all kitchen staff is familiar with the day’s requirements.
- Make sure that inventory is on hand at the right quality and quantity.
- Ensure that all statutory, as well as company, hygiene regulations are being strictly adhered to.
- Ensure that all maintenance problems are timely reported and followed up.
- Ensure that all communications between restaurant and kitchen run smoothly.
- Make sure that each cook receives the correct orders for the appropriate tables.
- Monitor output of kitchen for quality, presentation, quantity and correct temperatures.
- Utilize a hands on approach to training and developing kitchen staff.
- Ability to instill safety and sanitation habits in all employees.
- Ensure that the level of quality, portion control and plate presentation is adhered to consistently.
- Consistently check line plating and quality.
- Assist in inventory control.
- Supervise daily food preparation for assigned areas.
- Assist in the purchasing process.
- Approve purchase deliveries and maintain equipment and supplies.
- Prep, stock and rotate line to ensure ample supply of products is maintained.
- Adhere to all work rules, procedures and policies established by the hotel, including, but not limited to, those contained in the employee handbook.
Education and Experience:
- Previous kitchen experience.
Skills and Abilities:
- Thorough knowledge of food handling and preparation techniques.
- Be a certified food service handler.
