Deli/Smokehouse Operator

Summary/Objective:

A Deli Smokehouse Operator/Pit Master performs preparing and cooking of fresh meals, attending to customers, and general housekeeping.

Scheduled Shift:

5:00AM - 2:00PM

Reports to:

Deli Manager and Deli Supervisor

Essential Functions:

· All areas of customer satisfaction and service, including not limited to, responding to customer requests, questions and complaints.

· Early morning (5:00 am) keyholder position. Position requires reliability and timeliness.

· Working and communicating successfully with all levels of customers, management and fellow employees.

· Abides by all state, federal, company and Oklahoma Health Department food safety standards and practices.

· Knowledge of raw meat handling guidelines.

· Trims and removes bones from pork shoulders.

· Trims pork ribs.

· Ability to build and maintaining fires.

· Ability to follow direction, accept constructive criticism, follow recipes, and operate without constant supervision following a lengthy training period

· Flexibility and ability to adapt to changing needs of restaurant daily.

· Organizationalskills are a must. BBQsmoker will be utilizing multiple smokers, multiple protein types, time constraints, etc.

· Attention to detail and quality control are keys to being successful at this this position.

· Loading, unloading smokers, coolers and dry storage.

· Masters smokehouse skills to properly cook all food items within established time standards.

· Follows all standardized recipes.

· Maintains a safe, secure, and healthy work environment by cleaning work stations, equipment, and utensils.

· Checks smokers for proper settings, functionality, and temperatures.

· Keeps equipment operating in top shape by following operating instructions, troubleshooting breakdowns, maintaining supplies, performing preventive maintenance, and informing management of needed repairs.

· Masters and executes all opening, mid-day, and closing duties.

· Exceeds quality standards and provides superior food products and services.

· Assist with monthly lnventories.

· Unload product from delivery trucks.

· Stocking merchandise accurately and between code tags on the shell making sure stock is accurately priced, signed, rotated, and tagged as assigned and required by management.

· Ordering merchandise and controlling backstock.

· Requesting and verifying receiving credits for merchandise - that is damaged and/or short on delivery.

Job Types: Full-time, Part-time

Pay: $10.00 - $15.00 per hour
