GENERAL DESCRIPTION:

The Wyoming Department of Corrections (WDOC) contributes to public safety by exercising reasonable, safe, secure, and humane management while actively providing offenders opportunities to become law-abiding citizens.

The Wyoming Honor Conservation Camp (WHCC) is a prison containing three dorms housing minimum-security inmates as well as both male and female ITU inmates. The WHCC provides programming, vocational, recreational, and educational space to allow the WDOC to meet the goal of reducing recidivism through cognitive and behavioral intervention.

This position assists the Food Services Supervisor with supervision, direction, and training of inmate food service workers to prepare, serve, and store food according to institutional and USDA Food Standards.

ESSENTIAL FUNCTIONS:The listed functions are illustrative only and are not intended to describe every function which may be performed in the job level.
  • With the assistance of the Food Services Assistant, directs, coordinates, prepares and supervises the preparation of food for meals within guidelines of menu, dietary requirements, and the standards of appearance, taste, temperature, and sanitation.
  • Trains workers in safety and sanitation.
  • Prepares all religious and medically necessary diets and substitutions as needed.
  • Directs the portioning and serving of all meals.
  • Oversees distribution of bulk food and pre-plated meals.
  • Ensures that health guidelines are met in the daily preparation of food.
  • Manages inventory and review on a daily basis on all items.
  • Completes daily inventories of knives, controlled food items and tools.
  • Observes and records food, refrigerator, and freezer temperatures.

PREFERENCES:
Preference may be given to those applicants with three (3) or more years of experience in the food service industry.
KNOWLEDGE:

  • Knowledge of food safety practices; handling, and temperature control.
  • Knowledge of basic employee supervision methods.
  • Knowledge of procurement, receiving, and storage methods.
  • Knowledge of meal preparation and quantity/quality control.

MINIMUM QUALIFICATIONS:
Education:
Associate's Degree (typically in Culinary Arts)
Experience:
0-1 year of progressive work experience (typically in Food Services) with acquired knowledge at the level of a Food Services Assistant
OR
Education & Experience Substitution:
2-4 years of progressive work experience (typically in Food Services) with acquired knowledge at the level of a Food Services Assistant

None

PHYSICAL WORKING CONDITIONS:


  • Applicants must have the physical ability to lift up to 50 lbs. .regularly
  • Applicants must have the ability to remain on their feet for long periods of time.
  • Applicants must have the ability to sit, stand, bend, stoop, squat, reach, and hold items regularly.
  • Applicants must have the ability to supervise multiple food service inmate workers daily
  • Applicants must be able to see, hear, listen, and converse with inmate workers frequently
  • Applicants must be able to sit for long periods of time and have the visual and manual capacity to use a computer keyboard and screen for extended periods of time.
