POSITION DESCRIPTION: The Kitchen Staff works in a fast-paced and sometimes demanding environment helping to create and prepare delicious cannabis-infused meals

PRINCIPAL DUTIES AND RESPONSIBILITIES:

  • Produce high-quality Hot Foods with consistent flavor, texture, visual appearance, and proper medication.
  • Execute all prep items needed for the day in a productive and clean manner. Refer to the prep list provided in order to categorize and prioritize the day's tasks. [EX: Pizza dough needs to be made. With scaling, mixing, proofing, and portioning, this is a 4-hour task spread over the course of 6 hours. What time does it need to be started in order to accomplish it fully in one shift? How can you fit other prep/patient orders into this time?
  • Accurately compute the equations needed to execute creating butter and oil portions for use on the hotline. Scale, mix, and divide said portions with precision. Mother butter and Mother oil are made for the Cafe by pastry.
  • Lift up to 50lbs
  • Request labels for all savory goods from inventory (Slack channel #kitcheninventory), including all samples.
  • Work with inventory very closely, requesting adjustments to labels as patients request the vegan options at the counter.
  • Keep the Grill Prep station and Pizza Prep station clean and sanitized. All products labeled correctly with a birth and death date.
  • Every food item quality checked at the beginning of each shift as well as periodically throughout. When in doubt, throw it out!
  • Daily specials prepped and ready the night before the special is to run.
  • Maintain organization of the Hot Side portion inside the walk-in refrigerator. Rotate stock, FIFO.
  • Consistently work with a neat and tidy station. Following sanitation/food safety guidelines
  • Prep for and execute daily orders.
  • All dishes properly scraped, soaked, scrubbed, rinsed, sanitized, and placed in drying racks. We work together as a team to keep up with this which means you will wash your own dishes as well as those of your colleagues.
  • Collect clean, dry dishes from dish pit drying stations and return them to their designated places
  • Assist in packaging any and all to-go items going out from any other kitchen department.
  • Take care of daily cleaning responsibilities, weekly and deep cleaning.
  • Update par counts for ingredient needs and specials, daily. Note anything you are near out or out of on the 86 whiteboard.
  • Keep track of all items created during the day in the Mint Cafe - Inventory Log.
  • Update #tempecafe Slack channel at end of shift with what was accomplished and what information needs to be shared with your teammates.
  • Will be expected to work and help at off-site events.
  • Full availability including nights, weekends, holidays and occasional double shifts.
