Hogsalt is delighted to offer a Culinary Operations Summer Internship Experience for those students pursuing a career in Culinary Arts, Hospitality Management, or similar. Spend the summer learning exactly how we do what we do and come out the other side ready for anything.

Hogsalt is looking for people with drive, ambition, and that special sensibility to take on 11 hard-charging weeks that will put you hands-on with roles in your chosen field. Hogsalt does things a little differently, and our Intern program is no exception. It's rigorous and demanding, but if you're the kind of person who's passionate about learning and are up to the challenge, this is a singular opportunity.
We believe it's much easier to be a respected leader if you've done all the jobs of the people you're leading. That's why our Certified Trainers and Leadership Teams will guide Hogsalt Interns to learn and perform every hourly role in the Back of House (line cook, prep cook, baking & pastry, etc.), and do this in the venue that most closely aligns with each Intern's interests. Each Intern will also partner with Chefs and Leadership in the same house to explore and practice the subtle art of leadership, working shoulder to shoulder with some of our most experienced house Chefs and Leaders. In addition, our interns will delve into weekly leadership training workshops with Hogsalt's Recruiting, Training & Development Department, who will also meet them for one-on-one personalized weekly coaching sessions. During the summer, all Interns will have full access to the ongoing workshops and training opportunities made available to our staff. Finally, the Intern Group will have the opportunity to develop a Final Project - and present it directly to Hogsalt's top execs.

What to Expect:
Before you throw your hat in the ring, take a look at what you'll be doing and make sure it's right for you. As a Hogsalt Intern, you will:
  • Put in the time: You'll attend the Hogsalt Vision & Values orientation session and fully participate in all other orientation and coaching sessions with our Recruiting, Training, & Development team.
  • Strengthen the inner you: Develop teamwork and communication skills in 10 weekly workshopswhere we will also focus on topics such as communication, feedback, goal-setting, working in teams, the power of positivity, coaching & mentoring, and the art of the interview. What's more, you'll expand your range of knowledge with other training in areas such as HR, Finance & Admin, Facilities and (yes) training about "Training."
  • Work wisely: Sharp and hot items abound in restaurants and related spaces and you will be expected to handle our tools and equipment in safe and effective ways.
  • Know the Code: Effectively communicate in order to perform and follow job requirements in written and spoken direction.
  • Keep Your Cool: Smoothly and effectively juggle multiple tasks and demands under pressure.
  • Do the Work: Whether your Internship Leader assigns you to be a cook, runner, server, host, busser, etc, you're responsible for performing the essential duties as outlined in the job description for each role.
  • Take the Heat: This isn't your home kitchen, so expect things to be brighter/darker, hotter/colder, smaller, tighter, and more crowded.
  • Be Flexible: Expect the full gamut of days and shifts, including weekends and nights.
  • Flex Your Muscles: For BOH internships, you'll need to be comfortable shifting and lifting some weighty items. A lot of it will be less than 10 pounds, but expect to frequently lift and move items up to 25 pounds, and occasionally up to 50 pounds.
  • Conquer Your Environment: Working in the restaurant may involve lots of stair climbing, staying sure-footed on slippery and rough floors, or standing or sitting throughout the entire shift.

  • Be a Friend: You can't fake hospitality, so we always greet our guests and colleagues with a warm and sincere smile.
  • Be Discreet: All kinds of people in all kinds of moods walk through our doors. Whatever challenges they bring, we respond with kindness, patience, and tact, while practicing good judgment.
  • Know the Ropes: We use a wide variety of tools and equipment and you'll need to learn how to use (and get good at using) all of it.
  • Know the Law: Hospitality comes with regulations and rules. We comply with them all, from safety and sanitation to the rules, policies, conditions, and procedures handed down by the city and state, and also in our Employee Handbook. And you'll follow the law, too, by obtaining a Food Handler's Certification and/or BASSET Certification (for FOH & BOH Operations)..

The Fine Print
  • Chicago-based only.
