Duties/Responsibilities:

This position is responsible for the planning, purchasing, preparation, and cooking of meals at the facility as well as basic housekeeping at the facility. This position must be allergy aware regarding special dietary requirements. This position holds many diverse responsibilities and must be adept at prioritizing tasks so that each function is accomplished effectively, efficiently and on time. This position must work independently without close supervision of the Center Director and be willing to help out with tasks which might be well outside the scope of the job description if needed. This position will coordinate and schedule part-time staff as needed in the kitchen and for housekeeping duties

The position is responsible to Operations Management I. This is a 40 hour per week LDA position.

Meal Preparation: All meal preparation responsibilities including, but not limited to: Plan menus for meals consisting of beverages, entrees, side dishes, and desserts for small to large groups (10 people to 100 ); develop alternate menu options for special needs and allergy aware dietary requirements; monitors industrial freezer and cooler temperatures to ensure food is kept at proper temperatures; collaborate with co-workers and the Center Director in designing menus; communicate kitchen needs to co-workers and management; put up food as it arrives and maintain rotation of stock and monitor food expiration and use by dates to safeguard against spoilage; monitor recalls on food products; be proficient in care and use of industrial kitchen equipment; be proficient in care and use of small kitchen appliances and serve ware; clean and sanitize sinks, prep tables, and all kitchen equipment; clean and sanitize floors, walls, and soiled surfaces at the conclusion of meal service; responsible for making sure soiled towels are washed and put away properly in the kitchen; set up and break down chairs and tables in dining space; keep a running book of all meals served to each group for reference; responsible for ensuring all chemicals and cleaning supplies are stored properly and in compliance with the Tennessee Department of Health for Organized Camp licensure as well as food health codes. This position is also primarily responsible for the cleanliness and sanitation of the kitchen and dining room.

Purchasing and Inventory:

This position with be responsible for online ordering from vendors as well as call in ordering; monitor inventory of food and supplies including food preparation and housekeeping supplies. This position is responsible for verifying accuracy of food deliveries and quality of product.

This position may be required to transport materials around the camp or pick up supplies in town. All staff are expected to assist with other tasks as determined by the 4-H Center Director in order to make the overall operation of the camp run smoothly and efficiently. This position is also responsible for ensuring cabins and restrooms are cleaned upon departure of groups. This position is also responsible for making sure cabins and restrooms are ready for groups before arrival.

Minimum/Required Qualifications (include education experience, skills & abilities, licenses & certifications):

High school diploma or GED.

Strong attention to detail, self-motivated, positive attitude, strong work ethic and physical stamina to complete duties in a timely and excellent manner.

Must have a working knowledge of various kitchen equipment.

Knowledge of allergen-aware best practices.

Must have good communication skills, and be a team player.

Experience in working with the general public on a daily basis.

Knowledge and ability to maintain good working relations with co-workers and outside groups.

Ability to multi-task.

Maintain a flexible work schedule, and have excellent customer service skills.

Clear background check will be required.

Must have a valid Driver's license.

Preferred/Desired Qualifications:

Some experience working in an industrial kitchen.

Kitchen experience in a camp setting.
