JOB TITLE:GM of Operations
ESSENTIAL FUNCTIONS OF THE JOB:
- Professional communication skills

- Ensures proper staffing and training of employees and management team
- Oversees and ensures that all shift supervisors are performing and providecoaching as necessary
- Ensures all Standard Operating Procedures (SOP’s) are upheld

SPECIFIC RESPONSIBILITIES:
GENERAL
- Proficient in all areas of Operations: all hourly positions and functions
- Proficient in all FOH/BOH administrative and computer functions
- Ability to manage and coach a staff of 50 hourly employees
- Ability to work at least 50 hours a week or more as needed (commitment to work)
- Performs additional responsibilities, although not detailed, as requested by ownership
TEAM DEVELOPMENT & EDUCATION
- Utilizes all current training manuals and certifications as part of developingthe entire team
- Identify hiring needs and ensures all staffing levels are maintained properly
- Ensure safety practices are in place and followed. Maintain proper file(s) forrequired paperwork for worker’s compensation issues
- Ensure all company polices are enforced
- Ensure unit operates with zero tolerance for harassment
FINANCIAL
- Projects weekly sales and labor targets, reviews daily results, creates andcommunicates action plans for team
- Completes daily/weekly/monthly food and beverage inventory, reviewsweekly cost of good results, investigates discrepancies and provides coachingto resolve
- Benchmark for COGS & Payroll provided to assist with obtaining P&Lobjectives
- Assist with creation of store budget, review budget weekly to ensure unit ismeeting specified targets
- Control labor during shift, assess sales volume and make cuts when/wherenecessary, review daily labor figures (dollars/hours) for errors and correct, eliminate/minimize any overtime
OPERATIONS
- Ensures Cousins Maine Lobster standards for service, food and atmosphereare upheld at all times
- Ensures food handling, safety, and presentation standards are upheld at alltimes
- Ensures that line checks on all shifts are completed twice daily by the kitchenlead on duty
- Maintain no less than an “A” rating with health department
FACILITIES
- Enforce FOH/BOH cleaning lists and schedules, conduct a daily facilities walkthrough, and communicate action plans to ownership
- Maintain the facility by ensuring all repair work needed is completed
- Ensure all warranty work is performed by approved vendors and billedproperly
ADMINISTRATION
- Ensure weekly and period paperwork is accurate and completed on time
- Ensure proper cash handling procedures are followed
- Maintain archived paperwork/employee files as required
- Maintain constant communication with all management through daily use of the Manager’s Log and Weekly Manager Meetings
PERSONNEL / HUMAN RESOURCES DEVELOPMENT
- Maintain “open door” policy with employees
- Complete employee performance reviews on time and create action plan forpersonal development, develop managers and employees in areas needed fortheir advancement to the next level
- Ensure all employees maintain a professional atmosphere during their shift(100% compliance in uniform and grooming standards)
- Identify hiring needs and maintain proper staffing levels, utilize properinterviewing procedures to choose best candidates for the positions
- Terminate employees
- Follow-up on all complaints of harassment
- Follow proper procedures for all employee and guest accidents/incidents
- Maintain proper file of required paperwork for worker’s compensationissues, maintain all federally required posters for employee reviews
