Directs daily activities in the kitchen. Manages the Food Service program and directs Youth Care Workers who are assigned on a rotating basis each day to assist in the kitchen. The Food Service Manager ensures the smooth and efficient operation of the kitchen and is responsible for the production of nutritious, appetizing meals for youth while meeting all governmental regulations.
DUTIES:

1. Participates in the preparation and service of meals and snacks for youth, directs and coordinates production including adjustment of quantities. (E)
2. Ensures Youth Care Workers assigned to the kitchen perform food handling and clean-up and serving in a manner as trained to ensure maximum efficiency. (E)
3. Prepares food to provide nutritious meals while prioritizing from-scratch cooking, maximizing inventory, and minimizing cost. (E)
4. Orders and inventories food and supplies each week, month, and quarter as needed and as scheduled to ensure resources are maximized. (E)
5. Ensures food shipments are received, checked-in and matched against packing slips/invoices and dated to enable a first in-first out use of food. (M)
6. Maintains the highest possible levels of cleanliness and safety in the kitchen, food storage areas, and dining area and oversees, and participates in cleaning and sanitizing on a daily basis including trash removal, deep cleaning, and daily laundry, as needed. (E)
7. Ensures proper storage of all food on a daily basis in accordance with USDA requirements. (E)
8. Ensures that all equipment in the Food Service area is in safe, working condition and immediately notifies maintenance staff when the kitchen staff cannot perform repairs. (E)
9. Develops 3-week menu that meets the nutritional needs of the youth. (E)
10. Instructs kitchen personnel in the safe and proper use of kitchen equipment. (E)
11. Attends mandatory training. (E)
12. Provides feedback to the Assistant Program Director on the performance of Youth Care Workers assigned to the kitchen. (E)
13. Maintains appropriate, satisfactory and harmonious relationships with the public, co-workers, other employees and youth. (E)
14. Accepts additional duties as assigned. (M)
EQUIPMENT USED:
Computer, copy machine, fax machine, telephone, oven, dishwasher, and other common kitchen equipment and appliances.
WORK ENVIRONMENT:
· The employee has a greater than average risk of getting a minor injury such as a cut or burn while performing the duties of the job.

QUALIFICATIONS:
REQUIRED: Must be 21 years of age. 2 years managing a Food Service operation in an institutional setting.
PREFERRED: 5+ years managing a Food Service operation in an institutional setting. Bi-lingual (Spanish-English) fluency in both written and spoken forms.
