Job Description
The Department of Corrections, Division of Institutions, is recruiting for a Food Service Foreman position, at the Hiland Mountain Correctional Center (HMCC), located in Eagle River, Alaska.

What you will be doing:
The job duties for a Food Service Foreman at Hiland Mountain Correctional Center will involve, but are not limited to:
  • Supervision of Food Service Leads in daily menu planning, inventory control and sanitation.
  • Supervision of approximately 30 inmates in all aspects of preparation and serving nutritious, well-balanced meals for approximately 400 inmates in a secure institutional setting.
  • Train inmates in the art of food preparation, cooking, sanitation, personal hygiene, safety, and the correct use of institutional kitchen equipment in accordance with the State of Alaska, Department of Environmental Conservation Food Code. This includes preparation of special diets, such as: vegetarian, low cholesterol/low fat, diabetic, food allergy, finger food, and other medically-prescribed diets.
  • Ensure that security procedures are followed as they pertain to use and storage of knives and other sharps, foods, and contraband.
  • Check menus daily to ensure proper items are available in the amounts needed.
  • Instruct kitchen inmate workers in receiving, accounting for, and storing groceries and other supplies.
  • Conducting inventories and making sure items are properly stored, dated, and rotated as needed.
  • Ensure that standard recipies are followed and each food item is portioned properly.
  • Monitors and records total meals served, cost analysis reports; ensures Food Service operation is cost effective and within budget.
  • Directs and/or receives, checks, stores, distributes and tracks facility Food Service inventory. Ensures on-going training of staff.

Hiland Mountain Correctional Center is the State of Alaska's dedicated facility for housing female prisoners. Located in Eagle River, Alaska, it is a peaceful, private, heavily-wooded setting, with breathtaking views of the Chugach Mountains. The institution includes 11 buildings, containing approximately 120,000 square feet of space. It sits on 62.7 acres of land adjacent to Eagle River, Alaska. It has the capacity for approximately 400 prisoners.

CRIMINAL HISTORY CHECKS/APSIN/ACOMS
Please be aware - this position requires the use of the Alaska Public Safety Information Network (APSIN)/Alaska Corrections Offender Management System (ACOMS). A security clearance issued by the Department of Public Safety (DPS) is necessary to use APSIN/ACOMS. DPS will deny security clearance for any applicant who has been convicted of a felony or misdemeanor in this state or another jurisdiction, or who may be a fugitive from justice. Additionally, security clearance will be withdrawn if DPS discovers that material information was falsified or omitted at the time of the initial application for security clearance.
