Title:
Food Scientist

The position will be with the Human Health and Performance Contract (HHPC) supporting NASA's Health and Human Performance Contract (HHPC) at the Johnson Space Center, Houston, TX.
Specific activities include production support for shelf-stable foods, including development of processing instructions, specifications, and drawings, and monitoring production activities. Assistance with research projects including analytical testing, shelf-life determination, and sensory characterization. Additional activities include (but are not limited to) conducting literature reviews, preparing/reviewing technical reports, and preparing/presenting technical presentations.
Essential Duties and Job Responsibilities
  • Production Support - Monitoring production of shelf-stable food products, conducting production testing and documenting critical control points.
  • Research Support - assist the Research Food Scientist with analytical testing, sensory characterization, and sample inventory.
  • Technical writing - Develop food manufacturing specifications, drawings, instructions, and processing notes; prepare and review technical reports, presentations, and charts, as assigned.
  • Shelf-life determination - Initiate a two-year shelf-life study; collect data on sensory, microbiological, and physical characteristics.
  • Other tasks as assigned

Education and Experience
Required: BS degree in Food Science or a closely related discipline with minimum 5 years' previous experience in a commercial food production or research setting, or MS degree in Food Science or a closely related discipline. Previous demonstrated experience with food production, specification development, shelf-life determination, analytical evaluation, and data analysis/reporting. Strong understanding of shelf stability and food microbiology.
Desired:
  • Previous experience with product development
  • Serv-Safe certification
  • Experience updating existing ingredient and product specifications
  • Experience with nutritional estimation and label generation

Skills/Training
Required: Proficiency with Microsoft Office Word, Excel, SharePoint, and PowerPoint. Excellent oral and written communication skills. Experience summarizing and reporting research data.
Desired: Prior experience using EndNote, prior experience presenting research findings in front of a professional audience.
Work Environment
  • This job requires the ability to lift 40 pounds
  • This position requires a valid driver's license
  • You may be required to travel for this position (up to 20%)
