SalarySummary: Adjusts and monitors machine operation for the Drum Cookers and Mince line including belt speed, steam temperature, color application, completing required paperwork, reading recipes and product outlines. Shutdown, disassembles, cleans and reassembles machinery.
Essential Duties and Responsibilities: include the following. Other duties may be assigned.

Drum Cooker
Mince Line
Bundling
High Speed Shredder
Complies with Food Safety Procedures:
Hazard Analysis Critical Control Point (HACCP)
Sanitary Standard Operating Procedures (SSOP)
Good Manufactory Procedures (GMP)
Duties:
Troubleshoots problems such as air pockets, ingredient issues, machinery issues such as gears, gaskets, etc.
Communicates with Area Supervisors, Division Leaders and Cooking Operators fully to determine line speeds, downtimes, etc.
Completes mechanical check of drum cooker and or mince line (i.e., bundling belts, high-speed cutters, High Speed Shredder, angle and or mince line cutter, safety guards in position, etc.)
Constant visual monitoring of equipment and product quality. Makes appropriate minor
adjustments and informs Area Supervisor and or Division Leader of all variances from cooking outline.
Cleans & sanitizes equipment and work area following set procedures.
Verify ingredients and machine setting for accuracy. i.e. correct dye recipe is being used and correct steam temperatures are reached.
Performs assembly and disassembly of all equipment parts.
Documents data required electronically or on paper.

Ability to read a limited number of two- and three-syllable words from various cooking group outlines and to recognize similarities and differences between recipes and ingredients and between series of numbers and weights using the metric system. Ability to read, print and speak simple sentences.
Basic skills in recognizing, matching numbers, and working with decimals. Ability to add or subtract hours and minutes using military time.
Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations. (i.e. Food safety)
