Job description

Chesapeake Bay Snacks is a Baltimore based Food Manufacturing company. We are a small company with 6-8 employees that produces under the Koldkiss (snowball syrups, ice cream toppings, concessions items), America's Favorite Gourmet Popcorn (gourmet popcorn production), and Joseph's Sugar Free Syrup (pancake syrup) brands, in addition to our new and growing co-packing initiative where we make other brands' products.

Job Desciption:

The Production Lead will lead our syrups/sauces/toppings line and will oversee another 1-2 people as part of the job. Depending on the day, you may be making and bottling a 500 gallon batch of snowball syrup or a 50 gallon batch of spice infused oil. The job entails:

  • Morning meeting with the General Manager
  • Setting up for the day's task
  • Gathering ingredients and make/cook the recipe
  • Setting up the bottling line for the requisite bottles sizes and shapes, including our fill machine, our capper, our safety sealer, and our labeling machine. Our machines are a blend of computerized and non-computerized.
  • Overseeing the 1-2 production colleagues who will assist with picking and boxing completed products, palletizing, and storing.
  • Completing all production records, including recording lot numbers of all raw materials and finished materials, recording PH and Brix (or other methods) for food being produced.
  • Interfacing with the General Manager and Warehouse Supervisor regarding inventory levels, warehouse storage space and other logistics issues.
  • Overseeing and implement the daily/weekly/monthly sanitation program
  • Understanding and follow allergen safety protocols
  • Creating test batches for new products or for new co-packing assignment
  • Working efficiently and work with the General Manager to establish efficiency targets per product
  • Training and supervising production staff, providing guidance and support as needed
  • Identifying areas for process improvement and implement
  • With the General Manager, overseeing all aspects of Quality Assurance. Did the product turn out as desired and expected? Are they labels applied in a "retail ready" manner? Quality and consistency are very important.
  • Helping out your colleagues as needed. We're a small team, so some flexibility in daily duties is important. For example, help our warehouse supervisor unload a semi of raw materials, or help our popcorn production person on a large order.
  • Growing our co-packing business is a major focus for the company, so you will be required to learn how to make and scale new products as we onboard new clients.

Qualifications:

- High school diploma or equivalent

- Proven experience in a supervisory role in a Food Manufacturing or other culinary environment

-*****This person will have prior bulk food cooking and/or manufacturing experience*****, including experience making packaging product, including creating foods in bulk from scaled recipes and operating filling/packaging equipment. This experience could include Food Manufacturing experience or bulk food preparation in a catering or similar setting. - Proficient in basic math calculations and use of measuring tools

-Forklift operation skills optional but desirable

- Effective communication and leadership abilities to motivate and guide the production team

-While not an everyday need, experience with new recipe development would be helpful.

-Servsafe and/or FSPCA certification beneficial

-Be able to lift 50 lb bags of raw materials and/or pallets

-Be comfortable working around potentially dangerous equipment and situations, including steam heated kettles and conveyor belts and similar items
