The Food & Beverage Manager is responsible for the daily activities of the organization's food, beverage, and bar functions including quality and safety standards. Reports to the General Manager. The candidate must be someone who has the desire and ability to effectively manage, coach, motivate, develop and direct their team.
Accountabilities:
- Monitor adherence to quality and safety standards
- Oversees preparation and presentation of food and drinks
- Oversees menu planning
- Oversees food and beverage inventory and budget control
- Manages subordinate staff in the day-to-day performance of their jobs
- Assists in the planning and coordination of special events
- Manages subordinate staff in the day-to-day performance of their responsibilities
- True first-level manager
- Ensure that project/department milestones and goals are met
- Adhere to approved budgets
- Assist General Manager and Human Resources with personnel including recruiting, interviewing, hiring, training, scheduling, and disciplinary action
- Ensure compliance with all OSHA and health department guidelines as required by the state of Indiana for the food service area
- Assist with overseeing cash handling duties including preparation of tills, change fund maintenance, and preparation of deposits
- Provide General Manager with all food service invoices, to include all vendors as required
- Ensure cashier personnel adhere to correct cash handling procedures and sell effectively
- Ensure the employees run the food service area safely, efficiently, and professionally
- Complete Manager Objectives each day as required by Malibu Jacks
- Ensure that all food service staff are strictly adhering to company policies and providing outstanding customer service
- Maintain the highest standard of food service area appearance
- Oversees regular inventory of the food service area
- Maintain a professional Malibu Jacks image including cleanliness, proper uniforms, and appearance standards
- Ensures food service area is keeping food cost, part costs and labor costs (hours) at or below Malibu Jacks acceptable standards
- Understands and follows all cash handling procedures including safe maintenance, deposits and all banking functions
- Maintains great relationships with all vendors and notifies the GM of any vendor issues
- Work with HR to complete (documentation, written warnings, promotions, demotions, pay changes, etc.) administrative duties accurately, on time and in accordance with company policies
- Ensures their Team is providing a safe working and guest environment to reduce the risk of injury and accidents
- Ensure proper training of food service staff and have the tools and equipment needed to effectively carry out their job functions. Inform General Manager if not.
Principle Duties and Responsibilities:
- Ensure a positive safety culture ensuring safety of food service employees and visitors at all times.
- Ensure compliance of Malibu Jacks Standards
- Interact and communicate with employees to monitor performance, engagement, and employee development
- Perform other duties as assigned by the General Manager
- Must be available to work all shifts including nights, weekends, and holidays
- Must be able and willing to stand or walk for up to 10-hour shifts
Education, Qualifications and Experience:
- Minimum 3 years of bar experience
- Minimum 2 years of restaurant experience
- Certified Food Protection Manager
- Ability to obtain Illinois Employee Alcohol Permit
- Experience in a high-volume setting
- Results driven individual with a demonstrated record of prior success.
