- Revenue Responsibility: $3 Million Top-Line

The Opportunity
We're looking for an Executive Chef to head our multifaceted culinary team. This role demands a hands-on approach blended with a data-driven understanding of menu selection. You'll oversee a diverse range of dining concepts and a seasonal staff that includes J1 visa holders from around the globe.
Core Responsibilities:
- Prepare for the seasonal opening and closing of the Lodge's kitchens.
- Set and enforce nutrition, sanitation, and food preparation standards.
- Develop and maintain training programs with an emphasis on safety, product quality, food production, and cleanliness.
- Manage warehouse ordering, requisitions, stocking, and receiving.
- Handle reporting and inventory systems.
- Code and organize all food invoices for monthly tracking.
- Estimate food consumption, costs, and set relevant pricing.
- Create and analyze recipes for special dishes.
- Purchase or requisition food and kitchen supplies.
- Perform other duties as appropriate and as assigned.
Skills & Experience:
- Minimum of 6 years' experience as an Executive Chef or similar position. Any combination of management, education, and experience that provides the required skills is also acceptable.
- Proven ability to manage high-volume kitchens across various restaurant types.
- Experience in handling banquets is essential.
- Experience working in a seasonal environment is highly desirable.
- Multiple outlook experience is a plus.
- Proven experience with Microsoft Office Suite (Word, Excel, PowerPoint, Outlook, Teams) is required.
