Reverie Bakeshop is an all plant-based bakery established in 2013. We are seeking a skilled and dedicated Overnight Baker with a passion for baking and donut making to join our team. This role is essential in crafting high-quality vegan pastries for our bakery, ensuring that fresh, delicious products are available to our customers each morning.
This position hours are from 2am - 10am Full Time *varies for weekends & holidays*
Responsibilities
- Getting the bakery ready and cases filled early in the morning
- Prepare and make a variety of donuts and other baked goods according to recipes and quality standards. We are a scratch kitchen, must have knowledge of baking from scratch.
- Decorate donuts and pastries using icing, glazes, and other toppings.
- Prepare a variety of baked goods, including but not limited to kolaches, muffins, cookies, cinnamon rolls, and more.
- Manage all aspects of the donut-making process, including mixing, proofing, shaping, frying, and finishing.
- Maintain a clean and organized baking environment, adhering to health and safety standards.
- Operate and maintain baking equipment, such as mixers, ovens, proofers, and fryers.
- Monitor inventory levels of ingredients and supplies, communicating needs to management.
- Work independently during overnight hours, maintaining productivity and quality standards.
- Contribute ideas and suggestions for new products and improvements.
Skills
- Proven experience as a Baker, Pastry Chef or similar role, experience with donut-making is a plus.
- Familiarity with all professional kitchen equipment, including mixers, blenders and dough sheeters
- Experience with cake decoration techniques
- Team spirit, with a customer-focused attitude
- Knowledge of a variety of baking techniques and fermentation processes.
- Ability to work overnight and Early Morning shifts.
- Strong attention to detail and commitment to quality.
- Self-motivated, with the ability to work independently and with others.
- Good organizational and time-management skills to meet production deadlines.
- Knowledge of cross-contamination, allergens, food handling and safety regulations.
- Ability to work in a fast-paced environment while maintaining quality standards.
- Physical stamina to stand for extended periods and lift heavy items.
- Certification from a culinary school is a plus
