About the Position
The Detention Food Services Supervisor is responsible for the overall planning direction, and management of the activities, operations, and programs of the Food Services Division for the Juvenile Probation Department Detention Cafeteria. The Detention Food Services Supervisor is responsible for providing healthy meals for youth and provides oversight of the daily operations and food preparation in the main kitchen of the Juvenile Detention facility to ensure quality and compliance with the guidelines of the USDA, FDA, NSLP, and HACCP.

Position Qualifications

Education:
  • High School Diploma or GED
Experience:
  • Four (4) years of experience in high-volume food preparation
  • One (1) year of lead and/or supervisory experience in a high-volume food service environment
OR
Combined Education and Experience Qualifications:
  • An equivalent combination of post-secondary education or job-related experience may substitute on a year-for-year basis
Other Requirements:
Must possess or obtain an Arizona Food Handler’s Card or an ANSI- accredited food employee training course certification certificate or any necessary certifications for food safety and handling. Must possess a valid Arizona Driver’s License.
Knowledge, Skills, and Abilities:
Knowledge of:
  • Raw materials, production processes, quality control, costs and other techniques for maximizing the effective preparation of food
  • Techniques and equipment for preparing food products for consumption, including storage and handling techniques
  • The equipment, methods and procedures used in the preparation, cooking and distribution of food to a large group of people
  • The methods, materials and appliances used in a large scale food preparation service
  • The basic principles of supervision
  • Kitchen safety procedures
  • USDA, FDA, NSLP and HACCP guidelines
Skill in:
  • Menu planning and development
  • Staff scheduling
  • Skilled in identifying measures or indicators of system performance and the actions needed to improve or correct performance, relative to the goals of the system
  • Skilled in material resources management through obtaining and identifying the appropriate use of equipment, facilities and materials needed to complete specific tasks
  • Supervising multiple priorities and events simultaneously
  • Maintaining adequate sanitation of the kitchen and food safety standards
Ability to:
  • Follow menus and adjust recipes to applicable quantities needed
  • Ensure proper portion control
  • Operate heavy-duty industrial food service equipment
  • Communicate effectively orally and in writing
  • Cook large quantities of food in a way that best preserves the nutritional value and enhances the flavor
  • Plan work and coordinate other kitchen activities in a way that meets planned meal schedules
  • Supervise, instruct and give on the job training to others, including performance evaluation and disciplinary action recommendations

  • Catering experience for up to 100 people
Essential Job Tasks
(This is not an all-inclusive list of all job duties that may be required; employees will be required to perform other related duties as assigned. List in order of importance)
  • Manage Food Services employees including developing and monitoring performance plans, evaluating performance, training, counseling and coaching staff, determining work schedules and priorities, and interviewing and selecting staff
  • Ensure compliance with the National School Lunch Program guidelines
  • Provide on the job training for employees on food handling techniques and methods, equipment operation, safety and sanitation standards
  • Oversee production and make certain that food temperatures meet standards and meals are produced and delivered on schedule
  • Establish and plan meals that meet or exceed federal standards for youth and special diets/menus
  • Work with the detention facility to develop a meal distribution schedule
  • Monitor compliance of all kitchen operations with local, state, and federal health regulations
  • Develop security procedures to ensure that meals are prepared and delivered in a safe and secure manner
  • Ensure kitchen equipment is properly maintained
  • Develop and implement operational policies and procedures
  • Establish goals, strategies and priorities
  • Research new food service technologies and trends
  • Maintain records and statistics related to menus and meals served; analyze service delivery statistics and prepare reports for management
  • Develop relationships with local groups and food banks
  • Prepares preplanned menus for special events of up to 100 people or more, and organize all items needed for delivery and meal preparation
  • Maintain and control inventory of food and supplies
  • Conduct monthly and annual physical inventories
  • Supervises food preparation and kitchen operation to ensure quality
Working Conditions:
This position is located in a secured detention facility and will have interaction with detained youth. Some driving will be required to deliver catering and filling in at the other location if necessary. Lift and/or carry 15-44 pounds, sit, stand, walk, climb stairs, reach, perform repetitive hand motions, hear, speak, and perform some travel between County buildings.
While performing the duties of this job, the employee is regularly required to speak clearly and hear; see details of objects that are less than a few feet away; sit for long periods of time; stand, walk, use hands to finger handle or feel; reach with hands and arms; and occasionally push, pull or lift up to 20 pounds.
