Summary
The Cook Supervisor position is located in the Nutrition and Food Service of the Edward Hines JR VA Medical Center . As Production Supervisor, the incumbent is fully responsible to plan, produce, direct, coordinate and monitor all phases of food production. In the absence of the Food Service Section Supervisor, the incumbent is responsible for the operation of both the food production/service areas and the administrative duties within those areas.

Duties
Major duties and responsibilities include:
  • Performs work planning responsibilities:
    • Independently coordinate/direct the operation of the food service/production areas using standards, procedures, diet manual, modified menus and production sheets to guide the work.
    • Uses resources to operate within a planned financial budget; shares in the managerial responsibility for the proper supervisor of labor, allocation of subsistence and supplies and all other resources required to accomplish quality Veteran centered meal services.
    • Coordinates with higher level supervisors of the need to revise work schedules and other resources.
    • Participates in meetings and discussions regarding the planning of current and future work schedules, budget requests, staffing needs, estimates, and other recommendations regarding projected work.
  • Performs work direction responsibilities:
    • Provides technical direction and training when scheduling work operations with complex work steps and processes.
    • Investigates work-related issues such as excessive costs or low productivity and determines causes.
    • Implements corrective actions within authority to resolve identified work issues.

  • Performs administration responsibilities:
    • Develops, documents, and evaluates standards of work performance in development of performance plans.
    • Observes subordinate employees' work and ability to follow instructions, sanitation and safety precautions, compliance with food safety, proper equipment's usage and care, provides suggestions, and guidance as required.
    • Prepares employee annual evaluations; recommends employees for Incentive/Special Contribution Awards.
    • Interview applicants for positions in Food Production/Service areas and recommends appropriate selections for hiring, promotion, and re-assignments of employees.
    • Investigates grievances and complaints per bargaining unit agreements, resolving them where possible, and notifies supervisors of those of sufficient importance or seriousness.
    • Oversees safety and sanitation program.
    • Submits work orders to maintain equipment and recommends replacement as necessary.
    • Participates in planning training needs and effectiveness of training conducted and recommends methods to improve the training program.
  • Performs duties in front line production:
    • Independently prepares and cooks a variety of items including regular and therapeutic diet (diabetic, low sodium, low protein, gluten free, ect.) entrees and dessert items.
    • Follows menus, productions sheets, recipes to prepare items in quantity needed.
    • Uses a variety of methods to prepare meats, fish, and poultry including broiling, roasting, baking, frying, boiling, steaming, stewing, braising, and grilling.
    • Slices meat items by hand, confirming to specific size requirements or weight specifications.
    • Prepares fresh, canned, and frozen vegetables; bakes frozen potatoes, pre-made cookie dough, and muffin batters.
    • Prepares and heats convenience items; and prepares pureed foods and adjusts consistency with thickeners.
    • Washes, peels, and cuts fruits and vegetables; assembles and mixes salad ingredients and dessert items, including gelatin molds and fruit crisps.
    • Plans cooking processes to produce meals on time and at the proper temperature which may require coordination of cooking several items with different cooking times.
    • Makes a variety of desserts such as cobblers, brownies, cookies, and pastries.
    • Weighs, measures, and assembles ingredients for regular and modified diets.
    • Operates a variety of kitchen equipment and follows appropriate safety procedures.
    • Follows sanitary food handling procedures.
    • Disassembles and reassembles equipment for cleaning.
    • Cleans and sanitizes work areas; and performs deep cleaning tasks when needed.
    • Operates industrial dish machine.
    • Performs other related duties.

Physical Effort: Physical Effort: Cooks at this grade level perform work requiring continual standing and walking, and frequent stooping, reaching, pushing and pulling, and bending. They frequently lift or move objects weighing up to 18 kilograms (40 pounds) unassisted, and occasionally lift or move objects weighing over 18 kilograms (40 pounds) with the assistance of lifting devices or other workers.
Working Conditions: The work is performed in kitchen areas which are well lighted but are often hot and noisy. The cooks are exposed to steam, fumes, and odors from cooking and to extreme temperature changes when entering walk-in refrigeration or freezing units. There is danger of slipping on wet floors that have been recently mopped or where food has been spilled. They are subject to possible cuts from knives and burns from steam, hot foods, stoves, and hot grease and water.

Note: A full year of work is considered to be 35-40 hours of work per week. Part-time experience will be credited on the basis of time actually spent in appropriate activities.
