The Chief Stewarding is responsible for planning, organization, direct and control activities of stewarding department.
Requirements
DEPARTMENTAL ORGANIZATION:
Kitchen, banquet, dining equipment handling procedures.
China, glass, silver and equipment storage locations and distribution procedures.
Flow of warewashing room.
All kitchen sanitation supply purchasing specifications.
Warewashing/burnishing equipment routine maintenance.
Keeps MSDS.
Comply with all OSHA working environment requirements.
QUALITY CONTROL:
Implement the highest standard of food storage, and handling procedures and kitchen sanitation.
Manage china, glass and silver inventories to within operational breakage allowances.
Establishes controls to guard against theft and waste.
OPERATIONS:
Cleanliness of:
Kitchen walk-in refrigeration/freezer units;
stationary and mobile equipment;
all kitchen surfaces - floor, wall and ceiling, ventilation screens;
banquet service hallways.
Equipment all mobile carts and equipment;
small wares, flatware, hollowware, glassware;
Garbage cans and areas.
Schedule and coordination of all non-cooking kitchen personnel engaged in activities such as dishwashing, burnishing (brass, copper and silver), kitchen garbage recycling and disposal, night cleaning, storage and distribution of food stuffs and supplies.
Manages equipment stores and generate necessary equipment requisitions.
Manages banquet equipment needs and turnover, distribution, and stewarding staffing needs.
Kitchen maintenance and cleaning request scheduling.
Kitchen sanitation supplies kitchen (hand soap, paper towels, dishwashing y burnishing products, grill blocks, screens, etc.).
Garbage recycling and disposal.
Equipment storage area inspections.
Participate in inventories.
Participate in Kitchen Inspections.
Attend weekly Department Head, Food & Beverage, Catering, and Kitchen meetings.
Conduct weekly supervisory stewarding meetings.
Proficient use of all department equipment.
PERSONNEL MANAGEMENT
Employee Training Review and Development
Implementation of all work safety and emergency procedures, training, and responses according to Hotel Safety and Emergency Procedural Manuals.

SUPERVISORY RESPONSIBILITIES:
Manages four subordinate supervisors who supervise a total of 36 employees in the Warewashing, Burnishing, Equipment Stores & Distribution, and Night Cleaning positions. Is responsible for the overall direction, coordination, and evaluation of these units. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring and training employees; planning, assigning, and directing work; appraising performance, rewarding and disciplining employees; addressing complaints and resolving problems.
