The Chief Steward will oversee the kitchen stewarding team.
Responsibilities Include:
- Supervise stewarding department.
- Manage inventory of plates, silverware, bowls, and platters.
- Supervise the cleanliness of kitchen.
- Ensure cleaning of all kitchen equipment.
- Direct and assist kitchen stewards.
- Check chemical levels and water temperature.
- Assist with banquets plate up when needed. Ensure plates are clean and have the correct number of plates before a plate up.
- Assist with small food prep, peeling onion, carrots, potatoes, etc..
- Help with setting up buffets.
- Work closely with the EC and other food and beverage managers.
- Take necessary action to prevent silverware, plate, and glass loss.
- Make sure we are using proper chemicals and chemicals properly labeled.
- Lead your team by example.
- Communicate daily with the culinary management team.
- Making sure clean dishes are properly put back where they belong.
Requirements
- Must work well under pressure.
- Serve safe certification is a plus but not required.
