Rootstalk is the creation of Chef Matt Vawter. After a fourteen year tenure in Denver as the Chef de Cuisine at Fruition Restaurant and later as the Executive Chef/Partner at Mercantile dining & provision, Chef Matt left Denver to return home to Breckenridge and open his first restaurant Rootstalk in October of 2020. Rootstalk serves contemporary American cuisine inspired by the seasons. We are team of hospitality professionals focused on providing our guests with a memorable dining experience rooted in seasonal/technique driven food, an intentionally curated wine program, seasonal/crafted cocktails and genuine hospitality. In April of 2022 Matt and his team opened their second venture, Radicato. Rootstalk and Radicato are privately owned and operated by Chef Matt, with his partners Chef Cameron Baker and Director of Hospitality Patrick Murphy. As Owners we are deeply involved in the day to day operations and mentorship of our team.

We are looking for individuals that share our passion for providing special experiences for our guests, are focused on honing their craft and eventually becoming great chefs, and enjoy having fun while doing it.
We are focused on providing a work environment where team members can learn and grow to achieve personal goals in the restaurant industry while enjoying all things that a small mountain ski town has to offer from a lifestyle perspective.

Job Requirements

  • 2-3 years of cooking experience in a high-level kitchen.
  • Uncompromising work ethic.

  • Ability to communicate at a high level.
  • Attention to detail.
  • Ability to receive criticism and learn.
  • Punctual.
  • Ability to work clean and organized.

Job duties:

  • Maintain order, efficiency, discipline and standards on sections throughout the kitchen
  • Execute within the systems of the restaurant to maintain cleanness, sanitation and organization.
  • Assist teammates during the prep day and during service.
  • Be a team player

Compensation

  • Structured hourly pay based on experience.
  • BOH Service charge structure goes directly to BOH team in addition to hourly pay.
