Job description

The City of Roanoke is seeking a Catering Manager to provide support and assistance with all Catering activities as well as providing assistance to the Concessions Manager in the profitable management of concessions operations, as needed. The Catering Manager is responsible for marketing, selling and providing logistical support and client interface for catered events. The Catering Manager will actively supervise, coach, counsel, direct, train and mentor employees in meeting Berglund Center's quality standards, and will promote a positive, enthusiastic and cooperative work environment.

Examples of Duties:

SUMMARY

Manages the catering operations, catering staff, warehouse inventory, and Bypass Point-Of-Sale application.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.

Assists in the overall effective management of Catering and Concessions operations.

Ensures total compliance with all alcohol service policies.

Monitors alcohol service throughout event to assure 100% compliance with Alcohol Service policies.

Reports any alcohol service or compliance issues to the Director of F&B or Concessions Manager immediately.

Provides on-going direction, supervision and mentoring to hourly event staff.

Monitor product quality and ensure high level of guest service.

Assists in troubleshooting technical problems with Point-of-Sale Systems, from both a hardware and software perspective.

Assists in vault opening, closing and balancing, as necessary.

Assists with overall scheduling of catering FOH staff, as required.

Generates event employee staffing charts and verifies employee times and location assignments as required.

Oversees all linen requirements, stock levels, ordering, receiving, etc. for the F&B operation.

Assist in the on-going training, development, mentoring and supervision of hourly employees, as directed by department managers; responsible for completing documentation of employee performance and attendance issues in accordance with company policy and practice.

Assist in the management of catered events from set-up to tear down, including handling all communication with hourly staff, culinary staff and guests.

Meets with existing show promoters, constituent groups, and facility clients to market and sell catering at the venue.

Interacts with clients and venue personnel to ensure complete satisfaction with catered events.

Maintains costing, pricing sheets for all menus, services and facility charges and updates as needed.

Processes and coordinates client's requests and special needs.

SUPERVISORY RESPONSIBILITIES

This job has supervisory responsibilities.

KNOWLEDGE, SKILLS AND ABILITIES

Valid Food Handler's certificate if required by state and/or county of venue.

Valid Alcohol Service Permit if required by state and/or county of venue.

Familiar with inventory cost control and menu planning.

Basic computer proficiency: E-mail, Excel, Word, Outlook, Microsoft 365Working knowledge of Point of Sale and timekeeping systems.

Cash handling abilities; basic math skills including significant number manipulation.

Ability to work a variable work schedule (including evening and weekends, as required), depending upon event and business requirements.

Good verbal and written communication skills.

Must be able to project a professional manner and appearance, and communicate effectively with clients, staff and the general public.

EDUCATION and/or EXPERIENCE

Associate degree (A.A.) or equivalent of two-year college or technical school; or six months to one-year related experience and/or training; or equivalent combination of education and experience. Nationally recognized, advanced food service sanitation course certification.

LANGUAGE SKILLS

Ability to read, analyze, and interpret journals, financial reports, or governmental regulations. Ability to respond to inquiries or complaints orally and in writing. Ability to communicate effectively with management, public groups or employees of organization.

MATHEMATICAL SKILLS

Ability to work with mathematical concepts such as probability and statistical inference. Ability to apply concepts such as fractions, percentages, ratios, and proportions

REASONING ABILITY

Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written or oral form.
