The Refectory is a refined yet casual restaurant, bar, and private events space located in Villanova, bringing top of class dining experiences to Philadelphia’s Main Line and surrounding suburbs. Our wide-ranging menus reflect upscale, classic, American cuisine under the direction of Chef Biff Gottehrer. A “Refectory” is, by definition, a communal dining room that serves as a place to meet, eat, and drink together. Job Description:
- Hire, Schedule, Train, and Develop Bartenders, Servers, Hosts & Support Staff. Act as direct report for a department/s
- Promote a positive restaurant work culture and act as a leader for team members
- Conduct weekly bar inventory and manage the Bar COGS
- Order Beer, Liquor, and Wine
- Help to curate the beverage menu
- Ensure scheduled shifts meet the operational needs of the business on a weekly basis
- Manage the floor responsibilities of the business during operating hours
- Supervise & coach hourly staff members
- Troubleshoot Repair & Maintenance Items
- Ensure restaurant checklist procedures and standard operating procedures are being followed
- Ensure Restaurant Hygiene & State Health Code Compliance
- Conduct cash handling for the restaurant to reconcile cash sales
- Close out servers, support staff & as applicable
- Ensure quality control of food items & beverage items
- Ensure that the staff are making F&B items to proper specifications
- Work with GM to make sure staff are held accountable for job responsibilities
- Work with GM on operational needs for the venue
- Ensure staff are accurately paid through the input of the tip matrix
- Secure the restaurant and lock up at the end of the night
- Send out End Of Night report when closing the venue
- Help assist with general miscellaneous items for Refectory
