As a Banquet Cook, you will:

  • Maintain the highest degree of professionalism and teamwork as per standards of service. Contribute to a positive work environment.
  • Meet with the Banquet Chef to review assignments, anticipate business levels, changes, and other information pertinent to the daily work.
  • Produce accurate quantities of food, following the recipes and philosophies set by the Banquet Chef.
  • Communicate any changes to BEOs as they arise throughout the shift.
  • Follow production sheets to ensure efficient ordering of food and accurate production. Use products to their full potential, minimizing waste and using proper food rotation principles.
  • Start prep work and production of items needed for the day or the following day or days.
  • Inventory to ensure appropriate quantities of food for upcoming business.
  • Offer assistance and knowledge to kitchen team members newer to the kitchen setting, as directed by Banquet Chef.
  • On occasion, may support Banquet functions at the Hilton Asheville Biltmore Park property depending on business needs of the overall Biltmore Farms Culinary operation.
  • Have a "can-do" and upbeat attitude while providing support to the team.
  • Be available to work AM or PM shifts and work flexible schedules which include weekends and holidays.

Essential Elements

We believe in providing an elevated experience with each of our guest functions. From soups to sauces, the ideal addition to our banquet kitchen team has complete knowledge of culinary customs and banquet events and knows how to deliver. Successful candidates are team players, willing to pitch in to help wherever needed in the kitchen. Team members must be able to utilize and maintain DoubleTree by Hilton standards in every function performed.

Education & Experience:

Degree in a Culinary program and/or at least three years of full-service restaurant, banquet, or hotel kitchen experience preferred. Must have knowledge of buffet preparation, line cooking, soups, sauces, etc. Must have a High School Diploma or GED. Experience in a hotel environment is a plus. Possess good communication and interpersonal skills and be flexible and willing to work wherever needed.

Physical Requirements:

Able to lift and carry at least 35 lbs. Must be able to stand for prolonged periods of time and be able to walk, stoop and bend frequently. Must have tolerance to work with and around to hot grills, stoves, ovens, coolers, and freezers. Be able to use cleaning solvents and detergents on a regular basis.
