Job Title: Sushi Sous Chef

Job Overview:

We are seeking a skilled and experienced Sushi Sous Chef to join our culinary team. The ideal candidate will have a passion for Japanese cuisine, particularly sushi, and possess the ability to assist in the creation of visually appealing and delicious sushi dishes. The Sushi Sous Chef will support the Head Sushi Chef in kitchen operations, supervise staff, ensure food safety and hygiene standards, and contribute to menu development.

Responsibilities:

1. Sushi Preparation:

- Assist in the preparation of a variety of sushi dishes, including nigiri, sashimi, maki rolls, and other specialty items.

- Ensure the use of fresh and high-quality ingredients for all sushi creations.

- Demonstrate precision and attention to detail in cutting, slicing, and presenting sushi.

2. Menu Development:

- Collaborate with the Head Sushi Chef and culinary team to develop and update the sushi menu.

- Contribute ideas for new and innovative sushi creations while considering customer preferences and market trends.

3. Kitchen Management:

- Supervise kitchen staff, ensuring a smooth and efficient operation during peak hours.

- Assist in managing inventory, ordering supplies, and monitoring stock levels for sushi ingredients.

- Maintain cleanliness and organization in the sushi preparation area.

4. Quality Assurance:

- Uphold high standards of food quality and presentation.

- Monitor and maintain proper food safety and sanitation practices in accordance with health regulations.

5. Training and Development:

- Collaborate with the Head Sushi Chef to train and mentor junior sushi chefs and kitchen staff.

- Stay updated on industry trends and share knowledge with the team.

Requirements:

1. Culinary Expertise:

- Proven experience as a Sushi Sous Chef or a similar role with a strong portfolio of creative and well-executed sushi dishes.

- In-depth knowledge of Japanese culinary techniques and traditions.

2. Communication Skills:

- Excellent communication and customer service skills.

- Ability to interact with customers and kitchen staff in a positive and professional manner.

3. Time Management:

- Strong organizational and time management skills to handle multiple tasks and maintain a fast-paced kitchen environment.

4. Flexibility:

- Adaptability to changing menus and the ability to work in a dynamic and high-pressure kitchen environment.

5. Education and Certification:

- Culinary degree or equivalent experience.

- Sushi Chef certification is a plus.
