Description:
The Sous Chef works closely with leadership to maintain the highest quality and standards in the daily operations of the kitchen.
They ensure all pars are met in the prep kitchen and oversee execution of the menus throughout service.
This position also has an active role in the development of line cooks, prep cooks and porters/dishwashers.
Key Responsibilities
- Ensure high performance and maintain excellence & hospitality throughout each day’s specific service periods.
- Ensure that all recipes, product and food preparation meets the restaurant's specifications.
- Ensure that the kitchen is kept clean, safe and up to all “A” level health code standards.
- Assist with training new hires to execute their daily duties properly
- Ensures the completion of all opening and closing procedures as prescribed by company
- Assisting line cooks and prep cooks when needed
- Ordering of products for the restaurant, while keeping it within the weekly budget.
- Assisting in weekly inventory
- Ingredient freshness and control
- Supporting the Chef controlling food, labor, and operational costs.
Requirements:
- 3+ years of experience in culinary leadership in a similar environment
- Works well under pressure: must be able to gracefully respond to demand in a fast-paced environment
- Ability to supervise a team to work in a clean, organized, efficient manner, upholding all protocols for safety and sanitation
- Hold current NYC food safety accreditation.
- Be very familiar and comfortable using Google’s Suite of programs (sheets, docs, mail etc) as well as experience with inventory management/e-procurement platforms.
- Flexibility with schedule (Monday-Sunday, weekends required)
- Demonstrated experience in collaborating and communicating across teams
- English fluency and Spanish strongly preferred
