Position Summary
The Dining Service and Events Department at Saint John's University (SJU) invites applications for a full-time, benefit eligible position of Catering Chef. This position must be able to work varied hours and days including evening and weekend hours. Schedule varies based on business needs.
The Catering Chef's primary responsibility is food execution of all catered events, including but not limited to weddings, daily catering, camps, and conferences. This position will also provide support to all other culinary areas.

Responsibilities
  • Execute high level of food presentation and customer service.
  • Assist the Executive Chef in menu planning and recipe development based on market trends, customer preferences, and nutritional requirements.
  • Work in collaboration, with Chef and Culinary Team to create recipes and appropriate menus and the purchaser to ensure accurate allocation of goods required.
  • Development of recipe information to include portion sizes and written menu instructions, to be implemented into our menu management system.
  • Work collaboratively with Catering staff in service planning and execution of catered events and communicates details to kitchen support staff.
  • Help oversee budget by proposing appropriately priced items for catered menus, utilizing existing/surplus inventory.
  • Work with Executive Chef and Sous Chef to manage surplus catered food into the dining operation.
  • Assures standards and processes are followed for food and recipe preparation, presentation, batch cooking and storage including proper recording of heating/cooling and dating of items.
  • Train staff and students on proper plating techniques while emphasizing speed of the plating process and maintaining proper portion sizing.
  • Maintain and enforce standards of sanitation and safety as established by St. John's University, local, state, and federal health authorities; maintain equipment and work areas in neat, clean, and safe condition.
  • Work with MOD/PIC (Person in charge) in assigning production staff tasks as needed.
  • Assist in training of back of house staff and students that support catering operations.
  • Provide culinary support to all venues.
  • Utilize menu management system.
  • Suggests new menu ideas and offers ideas for improvement of Catering processes.
Qualifications
  • High School Diploma, formal culinary education preferred.
  • Minimum of two years of experience as a banquet/Catering Chef
  • High proficiency with all culinary products, tools and techniques.
  • Serve Safe Certification or ability to complete within 6 months of employment.
  • Strong verbal and written communication skills
  • Effective time management skills with ability to prioritize
  • May be required to pass DOT and college standard in order to drive college vehicles
  • Project a positive image of service which represents the unit to which assigned.
  • A willingness to maintain a high level of competence. Discreet judgement and confidentiality are expected at this level of responsibility.
Preferred:
  • Experience working with menu management system
  • Demonstrate effective computer skills within Microsoft Office or similar products
Physical Requirements:
  • Ability to lift and move 40 lbs. on occasion, with or without assistance.
  • Ability to tolerate noise levels and temperature fluctuations
  • Ability to stand for long periods of time and have considerable use of your arms and legs and moving your whole body, such as climbing, lifting, balancing, stooping, and handling of materials

HEALTH INSURANCE
Employees are eligible for coverage in the health insurance plan on the first of the month following date of hire. If you elect medical coverage for yourself, you may also choose to cover your eligible dependents. The employee and CSB/SJU share in the cost of this benefit. The Plan also uses a preferred provider network system where discounts are applied when utilizing health care providers in the network. Care received outside of the preferred provider network is covered, but at a higher cost to the employee and the institution.
DENTAL INSURANCE
Employees are eligible for coverage in the dental insurance plan on the first of the month following date of hire. AFLAC SUPPLEMENTAL INSURANCE
This voluntary plan offers an additional level of financial protection for you and your family in the event of a serious accident or illness.
LIFE INSURANCE
CSB/SJU provides a Basic Life and Accidental Death and Dismemberment (AD&D) policy to employees. This insurance is effective on the first of the month following date of hire. The amount of term insurance provided is based on your annual salary as follows:
Salary Life Insurance
$0-$20,000 $50,000
$20,001-$37,500 $75,000
$37,501-$50,000 $90,000
$50,001+ $100,000
Employer provided life insurance in excess of $50,000 is subject to imputed income tax (a tax on the value of the premium).
You may also purchase additional life insurance in increments of one, two, three, or four times your annual salary. There is also a dependent life insurance package available.
LONG-TERM DISABILITY
After one year of benefit eligible employment, CSB/SJU provides disability coverage in the event of an illness or injury that prevents you from working. This plan provides a benefit that equals 60% of your basic monthly earnings to a maximum monthly benefit of $11,000. This benefit may be payable, provided the employee is unable to perform the usual and customary duties of his/her occupation.
VACATION
Paid vacation is accrued based upon FTE and the number of years employed. Vacation is cumulative from year to year to a maximum of 240 hours.
Employees working 100% time receive the following:

beginning 3rd to end of 5th year 13 days
beginning 6th to end of 10th year 16 days
beginning 11th year and beyond 20 days
HOLIDAYS
Full-time employees receive 18 paid holidays a year:
New Year's Eve Day Juneteenth Friday following Thanksgiving Day
New Year's Day Independence Day Christmas Eve Day
Martin Luther King Day Labor Day Christmas Day
Good Friday Indigenous Peoples' Day
Easter Monday Wednesday before Thanksgiving Day
Memorial Day Thanksgiving Day
The additional days between the Christmas Day holiday and New Year's Eve holiday

This voluntary plan offers affordable vision coverage for routine eye exams, eyeglass lenses and frames, and contact lenses. Discounts on hearing exams and hearing aids are also included.
TUITION REMISSION
Tuition remission is an educational benefit provided by CSB/SJU. A full time employee and spouse (if applicable) are eligible for tuition free educational benefits the first full semester after six months of employment.
